Indian Pizza

Friday nights are usually the night we make pizza. For a while, we made the same pizza (our favorite with pesto, chicken, sundried tomatoes and olives), but in the last year, I've tried several different ones from Buffalo Chicken Pizza to Mexican Pizza to experiment with flavors. This week, I went with an Indian Pizza recipe and as you can probably guess, it has curry in it. I was unsure how it would turn out but with the jalapeno and ground beef, it was liked by Dan which means it's a keeper. Here's the recipe if you want to change-up your pizza routine. Enjoy.

Ingredients:
store bought pizza dough
1/4 bunch cilantro
1 large jalapeno chile, seeds discarded
1/4 c. olive oil
salt
4 oz. mozzarella cheese (1 cup)
1 1/2 tsp. curry powder
1/2 lb. lean ground beef or turkey
1 zucchini, halved lengthwise and cut crosswise 1/4 inch thick
1/4 large red onion, sliced

Grease a cookie sheet and stretch the pizza dough to fit the pan.




In a mini food processor, pulse the cilantro, jalapeno and 2 Tbsp. olive oil until a paste forms; season with salt.




Spread the paste on the dough, then sprinkle with the cheese.







In a medium skillet, heat the remaining 2 Tbsps. olive oil over medium heat and brown meat. Add the curry powder and cook, stirring for 30 seconds. Season with salt and stir in zucchini and onion, cooking about 2 minutes.






Top the pizza with the meat mixture. Bake for 20 minutes or until crust is golden.



Dig in!
