What should you make with all those blueberries you've picked or bought at the store now that the season is here? Well, I have just the recipe for you: Blueberry Buckle.I made this tasty treat for the first time this weekend and it is delicious. The dessert (or breakfast even) is like a blueberry muffin with crumb topping made in a 9-inch pan instead of a muffin tin. Try it, you won't be disappointed.
Ingredients
1/4 c. butter, softened
3/4 c. sugar
3/4 c. sugar
1 egg
2 c. all-purpose flour
2 tsp baking powder
1/4 tsp salt
1/2 c. milk
2 c. fresh blueberries
Topping:
2/3 c. sugar
1/2 c. all-purpose flour
1/2 tsp ground cinnamon
1/3 c. butter
Directions
In a small mixing bowl, cream butter and sugar. Beat in egg. Combine the flour, baking powder and salt; add to creamed mixture alternately with milk. Fold in the blueberries. Pour into 9-inch square pan.
For topping, combine sugar, flour and cinnamon in a bowl; cut in butter until crumbly. Sprinkle over blueberry mixture. Bake at 375 for 40-45 minutes or until a toothpick inserted near the center comes out clean. Cool on wire rack.
